Bikini Recipe

Makes enough for 10 people

To make the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Premix (produces 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Directions

Making the Citrus Syrup: Place all the components in a pan, bring to a gentle boil, stirring so the sugar melts. After that, remove from the burner allowing it to reach room temperature fully. Transfer to a sealable bottle, cap it and refrigerate it in the fridge, where it will keep for up to a month.

To make Batch Mix: Combine the specified liquids into a large bottle, let it rest for an hour, then strain , ideally through cheesecloth, to ensure it's perfectly clear.

To serve: Pour 85ml of your cocktail base into your mixing glass filled with ice, gently stirring gently for about 60 seconds to cool it down. Strain into a chilled martini glass or equivalent, decorate with some cranberries and finish with a brief mist of mandarin oil over the drink.
